Do you have a recipe that you know is good and that every time you make it someone says, "wow, this is good?" Well, this is my Chili recipe. It's easy and it always turns out. It's a recipe that makes a lot and, not only does it freeze well and make good left overs, but you can repurpose it into other different meals. It can be made in a pot on the stove, in a crock pot, or in an Instant Pot. I can hardly wait to share the recipe with you. You will have to let me know what you think.
EASY CHILI
2 lbs Ground Beef – browned, and rinsed in hot water
1 medium Onion – chopped
1 small can chopped Green Chili’s (1/2 cup)
2-3 stalks Celery – chopped
3 medium Tomatoes – chopped (or 1 can of chopped tomatoes-don’t drain)
29 oz. can Tomato Sauce
29 oz. can Kidney Beans (don’t drain)
29 oz. can Pinto Beans (don’t drain)
1 ½ tsp. Cumin Powder
1 Tbsp. Chili Powder (add 1/2 Tbsp. more if you want it spicier)
1 tsp. Black Pepper
2 tsp. Salt
2 c. Water
Put in large pot on stove and cook for 2-3 hours on low–medium heat, stirring/scraping bottom of pan occasionally.
Or-
Put in INSTANT POT and pressure cook for 30 minutes with a quick release. Make sure your Instant Pot will hold 10 cups, if not, leave the 2 cups of water out and after it’s done, you can mix the water in. If you want your chili thicker, only add as much water as you want to.
Or -
Put in a CROCKPOT and let cook on low for 7-8 hours.
One recipe makes approximately 10 cups. Leftovers freeze well.
Chili Toppings (Optional)
Cheese
Chopped Green Onions
Bacon bits
Crackers
Oyster Crackers
Corn Chips (I like Fritos)
Sour cream

OK so let's not just stop at the "Chili." Because the Chili makes a lot, you can do so many things with the leftovers. Here are some ideas....
✅ You can serve BAKED POTATOES with butter, chili, cheese, green onions, sour cream, and bacon bits.
✅ Or how about get some flour tortillas and put heated refried beans, chili and cheese inside and have a BURRITO.
✅ Another idea is to Make a TACO SALAD and use the chili in place of the meat.
✅ You can step up a plate of NACHOS AND CHEESE by pouring some chili over the top.
✅ One of my very favorite ways to use leftover chili is on Fry Bread with cheese, green onions, chopped tomatoes, lettuce, and sour cream. In Utah, we call "Fry Bread" Scones. But no matter what you call it, it's one of my favorite easy meals.
Good Chili is a comfort food and I have made it over and over again. I hope this Chili becomes a staple in your home, like it has in mine.
