Caramel Popcorn in the Microwave

"Easy" doesn't always mean it's great, but in this case IT DOES!
If you are looking for a treat that is easy to make and one where there’s a good chance that you will have the ingredients, look no further....

I got this recipe years ago from my friend, and I have probably made this 100 times since then. This recipe is better than my stove-top recipe and 10 x’s easier.
16 cups popcorn (popped, and sifted to get rid of kernels that didn’t pop)
Put in large microwave-safe container with lid (the original recipe says to put it in a large brown paper bag and that works too). Set aside.

Put the following in microwave-safe bowl:
1 cup Brown Sugar (packed)
1/3 cup Corn Syrup
1 Cube Butter (1/2 cup)
1 tsp Salt

Microwave on high as follows:
2 minutes then stir
1 minute then stir
1 minute then stir
1 minute then stir

Add 1/2 tsp Baking Soda
Stir until foamy
Pour over popcorn, put lid on and microwave as follows:
1 minute and then shake
1 minute and then shake until all popcorn is evenly coated


Pour onto a cookie sheet to cool, break apart and EAT!! You can store it in an airtight container or ziplock bag – this is if you have any left!
